Ingredients
- 1 tablespoon onion, chopped (any kind, green, red, spanish, vidalia)
- 2 garlic cloves, chopped
- 1 medium tomato, chopped
- 1/2 cup spinach, chopped
- 4 egg whites
- 2 tablespoons salsa
- 2 tablespoons cheddar cheese, grated (choose your favorite cheese)
- 1 ounce tortilla chips
Recipe
- 1 place a non-stick skillet on a burner set at medium-high. heat for about 2 minutes.
- 2 toss in the onion, garlic and tomato and saute for a minute or two.
- 3 add in the spinach and stir.
- 4 allow to cook until most of the water is gone - stirring every now and then.
- 5 add the egg whites and toss around until egg whites are cooked.
- 6 remove from heat.
- 7 plate and garnish with the salsa, cheese and tortilla chips.
- 8 enjoy!
