Marinated Greek Salad

Ingredients

  • Servings: 6
  • 4 roma tomatoes, finely diced
  • 1 cucumber, finely diced
  • 1 bell pepper, finely diced
  • 1 vidalia onions or 1 red onion, finely diced
  • 16 ounces cannellini beans, rinsed & drained
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 1/2 cup red wine vinegar
  • 1 teaspoon vinegar
  • 1 tablespoon minced fresh basil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 chop all veggies & place in a large bowl; add rinsed canellini beans. in a small bowl mix dressing ingredients. pour dressing over salad and mix lightly. sprinkle with feta cheese. serve immediately or cover & refrigerate to allow flavors to blend more.
