Protein Pancake

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 1
  • 2 eggs and one egg whites, mixed together
  • 1/2 cup uncooked old-fashioned oatmeal
  • 1 scoop vanilla whey protein powder
  • 1/4 cup non-fat vanilla yogurt or 1/4 cup plain greek yogurt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon stevia
  • 1 teaspoon maple syrup or 1 teaspoon sugar-free jam
  • cooking spray

Recipe

  • 1 mix first five ingredients together in a bowl.
  • 2 spray a small non-stick frying pan with cooking spray and turn heat to medium.
  • 3 add pancake mixture to pan, cook until edges are firm.
  • 4 flip, and cook one to two more minutes.
  • 5 slide onto a plate and top with syrup or jam.
