Quick Cassoulet

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • cooking spray
  • 1 lb smoked sausage, thinly sliced
  • 12 ounces boneless skinless chicken breasts, cut into 1 inch pieces
  • 1 (28 ounce) can diced tomatoes, undrained (hunts)
  • 1 (15 ounce) great northern beans, drained and rinsed
  • 1 (15 ounce) red kidney beans, drained and rinsed
  • 3 tablespoons brown sugar, firmly packed
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme leaves
  • 3/4 cup green onion, thinly sliced

Recipe

  • 1 spray large saucepan or dutch oven with cooking spray. heat 1 minute over medium-high heat; add sausage and chicken. cook 5 minutes, or until chicken is no longer pink, stirring frequently.
  • 2 add tomatoes with their liquid, beans, sugar, garlic powder and thyme. bring to a boil; cover with lid. reduce heat to low. simmer 15 minutes, stirring occasionally.
  • 3 remove from heat; stir in onions.
