Multicoloured Spanked Potatoes

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 2 quarts boiled potatoes, hot
  • 1 tablespoon unsalted butter
  • 8 fluid ounces sweet cream
  • cooked spinach
  • tomato paste
  • buttered breadcrumbs
  • crouton

Recipe

  • 1 mash the potatoes thoroughly.
  • 2 add the butter and cream and beat, whip or spank them until they are and fluffy.
  • 3 divide the recipe into four equal parts.
  • 4 to one, add cooked spinach; to another, add tomato paste.
  • 5 cover the third with buttered breadcrumbs and leave the fourth natural.
  • 6 serve in a round heated shallow dish, arranging the potatoes in the shape of a star.
  • 7 in the center, place a bouquet of parsley and border with croutons.
