Multicoloured Spanked Potatoes

Ingredients
- 2 quarts boiled potatoes, hot
- 1 tablespoon unsalted butter
- 8 fluid ounces sweet cream
- cooked spinach
- tomato paste
- buttered breadcrumbs
- crouton
Recipe
- 1 mash the potatoes thoroughly.
- 2 add the butter and cream and beat, whip or spank them until they are and fluffy.
- 3 divide the recipe into four equal parts.
- 4 to one, add cooked spinach; to another, add tomato paste.
- 5 cover the third with buttered breadcrumbs and leave the fourth natural.
- 6 serve in a round heated shallow dish, arranging the potatoes in the shape of a star.
- 7 in the center, place a bouquet of parsley and border with croutons.
