Mock-tato Salad (healthy And It Tastes Great!)

Ingredients

  • Servings: 6
  • 5 slices bacon or 5 slices turkey bacon, cooked crisp and crumbled
  • 1 cup chopped celery
  • 2 scallions, sliced
  • 4 small radishes, sliced
  • 3 hard-cooked eggs, peeled and chopped
  • 1 cup chopped fat-free cheddar cheese
  • 12 ounces extra firm tofu, cubed (one box)
  • 2 dill pickle spears, chopped
  • 1 tablespoon dijon mustard
  • 1/2 cup fat-free mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup toasted sliced almonds or 1/4 cup toasted sunflower seeds
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 mix everything except tofu together until it is mixed well.
  • 2 gently fold in tofu until it is coated.
  • 3 chill 1-2 hours before serving.
