Ingredients

- 5 slices bacon or 5 slices turkey bacon, cooked crisp and crumbled
- 1 cup chopped celery
- 2 scallions, sliced
- 4 small radishes, sliced
- 3 hard-cooked eggs, peeled and chopped
- 1 cup chopped fat-free cheddar cheese
- 12 ounces extra firm tofu, cubed (one box)
- 2 dill pickle spears, chopped
- 1 tablespoon dijon mustard
- 1/2 cup fat-free mayonnaise
- 1/4 cup sour cream
- 1/4 cup toasted sliced almonds or 1/4 cup toasted sunflower seeds
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
Recipe
- 1 mix everything except tofu together until it is mixed well.
- 2 gently fold in tofu until it is coated.
- 3 chill 1-2 hours before serving.
