Chocolatey Fruit Wraps

Ingredients

  • 60 g ricotta cheese (low-fat fresh)
  • 1/4 banana (small ripe, mashed)
  • 5 g chocolate (dark, finely grated)
  • 1/4 teaspoon cinnamon (ground a pinch)
  • 4 rice paper sheets (20cm round)
  • 1/2 pear (thinly sliced)
  • cocoa powder (to dust)

Recipe

  • 1 put the ricotta, banana, chocolate and cinnamon in a small bowl and mix until well combined.
  • 2 half fill a large bowl with warm water and place 2 rice papers (one at a time) in the water for 20-30 secondes or until they start to soften and then transfer to a clean surface (cotton teatowel recommended) and repeat with remaining 2 rice papers.
  • 3 spoon 1/4 of the ricotta mixture over 1/3 of each of the 4 rice papers and top each with a few slices of pear and then roll up to enclose the filling.
  • 4 dust wioth cocoa powder and cut fruit wraps in half to serve.
