Diva Diabetic's Pizza Frittata

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 4 large whole eggs
  • 8 large egg whites
  • 1 cup grated mozzarella cheese
  • 1/2 cup fresh tomato, diced
  • 2 garlic cloves, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • salt and pepper
  • chopped fresh basil (to garnish)

Recipe

  • 1 preheat oven to 350 degrees. in a small skillet, sauté tomatoes, garlic, oregano and red pepper flakes, salt and pepper in 1 tablespoons oil for 3 minutes under very low heat.
