Grande Baked Spaghetti

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 1/2 cups zucchini, chopped (unpeeled)
  • 1/2 cup red bell pepper, chopped
  • 1 3/4 cups tomato sauce (one 15 ounce can)
  • 1/2 cup salsa
  • 1 teaspoon chili seasoning mix
  • 3 cups cooked spaghetti, rinsed and drained (hot)
  • 1 1/2 cups low-fat cheddar cheese, shredded (6 ounces)

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 spray an 8-by-12-inch baking dish with cooking spray.
  • 3 in a large skillet sprayed with cooking spray, saute zucchini and red pepper for 5 minutes or until vegetables are just tender.
  • 4 add tomato sauce, salsa and chili seasoning.
  • 5 mix well to combine.
  • 6 stir in spaghetti and 1 cup cheddar cheese.
  • 7 spread mixture evenly into prepared baking dish.
  • 8 evenly sprinkle remaining 1/2 cup cheddar cheese over top.

  • 11 hint: 2 1/2 cups broken uncooked spaghetti usually cooks to about 3 cups.
