Ham And Eggs With Parmesan

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 cup diced ham
  • 1 onion (more or less to taste)
  • 12 eggs, beaten
  • 1/4 cup grated parmesan cheese
  • fresh ground black pepper (to taste)
  • oil

Recipe

  • 1 heat a little oil in a large, iron skillet.
  • 2 slice onion thinly then quarter the slices.
  • 3 cook onions and ham on medium-high until onions are soft and ham is lightly browned.
  • 4 reduce heat to medium-low and add eggs. cook, stirring often, until eggs are about half done.
  • 5 add parmesan and black pepper.
  • 6 cook until eggs are set.
  • 7 serve hot with good bread.
