Ingredients
- 2 medium onions
- 3 medium carrots
- 3 celery ribs
- 1 cup parsley, w/stems
- 3 cloves garlic, crushed
- 1/2 teaspoon thyme
- 2 bay leaves
- 2 quarts water
- to taste salt and pepper
Recipe
- 1 place all ingredients in a large soup pot.
- 2 bring to a boil, reduce the heat and simmer uncovered for 45 minutes.
- 3 strain and use immediately or refrigerate (or freeze) until needed.
