Diva Diabetic's Black Bean Salad With Chili Lime Dressing

Ingredients

  • 2 (15 ounce) cans black beans, very well drained
  • 1 small red onion, finely diced
  • 1 tomato, finely diced
  • 1 small red pepper, finely diced
  • 1 garlic clove, finely diced
  • 2 teaspoons cilantro, finely diced
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 2 limes
  • 3 tablespoons olive oil
  • 1 tablespoon cilantro, chopped
  • salt, pepper to taste

Recipe

  • 1 in a jar with a tight lid, shake together the vinegar, oil, the juice of both limes- freshly squeezed, salt and pepper to taste. add the rest of the ingredients in a large bowl, and drizzle with the dressing. mix well, adding salt/pepper to taste if desired. garnish with fresh cilantro and enjoy!
