Mama Zuquinis Skillet Chicken

Ingredients

- 2 tablespoons extra virgin olive oil
- 1 1/2 lbs boneless skinless chicken breasts
- 1/2 cup dry wine
- 2 cups cherry tomatoes
- 3 tablespoons pesto sauce
- 2 tablespoons lemon juice
- 1 (9 ounce) package fettuccine
- 1/4 cup feta cheese, crumbled
- 2 tablespoons pine nuts, lightly toasted (optional)
Recipe
- 1 heat oil in large, nonstick skillet over medium-high heat. add chicken; cook, stirring constantly, for 5 minutes or until no longer pink.
- 2 add wine; cook, stirring occasionally, for 4 to 6 minutes or until most of the liquid has cooked off.
- 3 add tomatoes, pesto and lemon juice; cook, stirring occasionally, for 1 to 2 minutes or until tomatoes are tender.
