Mama Zuquinis Skillet Chicken

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons extra virgin olive oil
  • 1 1/2 lbs boneless skinless chicken breasts
  • 1/2 cup dry wine
  • 2 cups cherry tomatoes
  • 3 tablespoons pesto sauce
  • 2 tablespoons lemon juice
  • 1 (9 ounce) package fettuccine
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons pine nuts, lightly toasted (optional)

Recipe

  • 1 heat oil in large, nonstick skillet over medium-high heat. add chicken; cook, stirring constantly, for 5 minutes or until no longer pink.
  • 2 add wine; cook, stirring occasionally, for 4 to 6 minutes or until most of the liquid has cooked off.
  • 3 add tomatoes, pesto and lemon juice; cook, stirring occasionally, for 1 to 2 minutes or until tomatoes are tender.
  • 4 prepare pasta according to package directions.
