No-beans Chili (diabetic)

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 onion, finely chopped
  • 1 lb ground beef, lean
  • 1 (10 ounce) can diced tomatoes and green chilies, mild
  • 1 (1 1/4 ounce) packet taco seasoning, reduced sodium

Recipe

  • 1 in a sprayed large skillet over medium heat, cook and stir onion until tender. do not brown.
  • 2 remove and set aside.
  • 3 in same skillet over medium heat, cook and stir ground beef until it browns.
  • 4 transfer to wire mesh strainer and drain.
  • 5 wipe skillet with paper towels to remove excess fat.
  • 6 return meat and onion to skillet. stir in tomatoes, taco seasoning and 1 to 2 cups of water.
  • 7 simmer 25-30 minutes for flavors to blend.
