Garlic Roasted Red Potatoes

Ingredients
- Servings: 4
- 8 -10 medium red potatoes
- 3/4 cup extra virgin olive oil
- 3 garlic cloves, minced
- 3 tablespoons fresh rosemary, finely chopped
- 1/2 cup green onion, chopped
- 1/2 tablespoon kosher salt
- 1/2 tablespoon fresh ground pepper
Recipe
- 1 heat oven to 325°f.
- 2 cross cut the potatoes and place in a roasting pan.
- 3 mix all of the ingredients in a small bowl except for the green onions.
- 4 spoon the mixture over the potatoes making sure to fill in the slices.
- 5 cook for 1 1/2 hours or until golden brown.
- 6 garnish with green onions.
- 7 this goes excellent with grilled salmon with dill sauce.
