Mexican Meatballs

Ingredients
- Servings: 10
- 1 1/2 lbs lean ground beef
- 1 ounce taco seasoning mix (1 package, taco bell, ortega, etc.)
- 1 green onion, finely diced
- 2 eggs
- 1 garlic clove, minced (optional)
- 8 ounces sharp cheddar cheese, cut into small cubes (1 block)
Recipe
- 1 preheat the oven to 425°f
- 2 beat eggs and mix all ingredients except the cheese together.
- 3 mold a tablespoon of meat around a cube of cheese to form a small shaped meatball. repeat with all meat.
- 4 place on edged cookie sheet (sprayed with pam) and bake at 425°f for 7 - 10 minutes or until meat is done and cheese has melted.
