Mexican Meatballs

Total Time: 22 mins Preparation Time: 15 mins Cook Time: 7 mins

Ingredients

  • Servings: 10
  • 1 1/2 lbs lean ground beef
  • 1 ounce taco seasoning mix (1 package, taco bell, ortega, etc.)
  • 1 green onion, finely diced
  • 2 eggs
  • 1 garlic clove, minced (optional)
  • 8 ounces sharp cheddar cheese, cut into small cubes (1 block)

Recipe

  • 1 preheat the oven to 425°f
  • 2 beat eggs and mix all ingredients except the cheese together.
  • 3 mold a tablespoon of meat around a cube of cheese to form a small shaped meatball. repeat with all meat.
  • 4 place on edged cookie sheet (sprayed with pam) and bake at 425°f for 7 - 10 minutes or until meat is done and cheese has melted.
