Irish Vegetables (diabetic)

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 5
  • 1 bay leaf
  • 1 cup water
  • 2 tablespoons wine vinegar
  • 1/2 cup corn
  • 1/2 cup broccoli floret
  • 1/2 cup carrot
  • 1/2 cup cauliflower floret
  • 1/4 cup pimiento, chopped
  • salt (optional)
  • fresh ground pepper

Recipe

  • 1 combine bay leaf, water, wine vinegar in medium saucepan.
  • 2 bring to a boil.
  • 3 either add vegetables to the water and simmer until vegetables are tender.
  • 4 or
  • 5 place vegetables in a steamer basket, cover, and steam vegetables until tender.
  • 6 if you simmer, drain, remove bay leaf.
  • 7 add salt and pepper.
