Irish Vegetables (diabetic)

Ingredients

- 1 bay leaf
- 1 cup water
- 2 tablespoons wine vinegar
- 1/2 cup corn
- 1/2 cup broccoli floret
- 1/2 cup carrot
- 1/2 cup cauliflower floret
- 1/4 cup pimiento, chopped
- salt (optional)
- fresh ground pepper
Recipe
- 1 combine bay leaf, water, wine vinegar in medium saucepan.
- 2 bring to a boil.
- 3 either add vegetables to the water and simmer until vegetables are tender.

- 5 place vegetables in a steamer basket, cover, and steam vegetables until tender.
- 6 if you simmer, drain, remove bay leaf.
- 7 add salt and pepper.
