Summer Corn Salad

Ingredients
- Servings: 4
- 2 cups corn, cooked or if frozen thawed
- 1 avocado, diced
- 1 pint cherry tomatoes
- 1/2 cup red onion, diced
- 2 tablespoons olive oil
- 1 tablespoon fresh lime juice
- 1/2 teaspoon lime zest (optional)
- 1/4 cup cilantro, chopped
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Recipe
- 1 mix ingredients for salad in a bowl.
- 2 in a small bowl or cup, combine all the ingredients for the dressing, mix well and then pour over the salad and toss.
- 3 chill until ready to serve.
