Fast Veggie Omelette

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 2 eggs
  • 1 mushroom, sliced
  • 2 tablespoons bell peppers, chopped
  • 1 green onion
  • 1/4 cup spinach
  • salt
  • pepper

Recipe

  • 1 whisk eggs together until frothy.
  • 2 pour eggs into a small fry pan sprayed with cooking spray.
  • 3 cook on medium heat until the eggs start to turn on the bottom.
  • 4 gently lay veggies on one half of the eggs.
  • 5 cook until the eggs are almost solid.
  • 6 using a spatual, gently fold the side of the omelette with out the veggies on top of the other side.
  • 7 continue cooking until the eggs are completely cooked.
  • 8 serve hot.
