Ginger Minted Chicken

Ingredients
- 1/2 cup coarsely chopped fresh mint
- 1 inch piece fresh ginger, peeled and chopped (about 1 tablespoon, or use 1 teaspoon ground ginger)
- 3 medium garlic cloves, crushed
- 1 cup plain fat-free yogurt
- 1 teaspoon ground coriander
- 2 (5 ounce) boneless skinless chicken breast halves
- 1 medium tomato, sliced
Recipe
- 1 mix mint, ginger, and garlic, together in a food.
- 2 processor or small bowl.
- 3 add yogurt and coriander.
- 4 place chicken in a bowl and pour mixture on top.
- 5 marinate 15 minutes, turning once during this time or longer if you have time.
- 6 preheat broiler.
- 7 line a baking sheet with foil and place chicken with some marinade on sheet.
- 8 discard remaining marinade.
- 9 broil chicken about 5 inches from the heat source for 5 minutes per side.
- 10 serve with sliced tomatoes along the side.
