Ginger Minted Chicken

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 1/2 cup coarsely chopped fresh mint
  • 1 inch piece fresh ginger, peeled and chopped (about 1 tablespoon, or use 1 teaspoon ground ginger)
  • 3 medium garlic cloves, crushed
  • 1 cup plain fat-free yogurt
  • 1 teaspoon ground coriander
  • 2 (5 ounce) boneless skinless chicken breast halves
  • 1 medium tomato, sliced

Recipe

  • 1 mix mint, ginger, and garlic, together in a food.
  • 2 processor or small bowl.
  • 3 add yogurt and coriander.
  • 4 place chicken in a bowl and pour mixture on top.
  • 5 marinate 15 minutes, turning once during this time or longer if you have time.
  • 6 preheat broiler.
  • 7 line a baking sheet with foil and place chicken with some marinade on sheet.
  • 8 discard remaining marinade.
  • 9 broil chicken about 5 inches from the heat source for 5 minutes per side.
  • 10 serve with sliced tomatoes along the side.
