Ginger Oatmeal Crisps

Ingredients
- 2 eggs
- 3/4 cup sugar or 3/4 cup splenda sugar substitute
- 1/4 teaspoon ground ginger
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 1 tablespoon butter, melted
- 2 teaspoons baking powder
- 1 3/4 cups quick-cooking oats
Recipe
- 1 heat oven to 350 degrees.
- 2 in a large bowl beat eggs until frothy.
- 3 add sugar, ginger, vanilla and salt; mix until sugar is dissolved, about 2 minutes longer.
- 4 blend in butter and baking powder, then fold in oats.
- 5 cover a large cookie sheet with ungreased foil.
- 6 drop the batter onto sheet in rounded teaspoonfuls spaced 2" apart.
- 7 bake in center of oven until the edges are golden brown, 10 to 12 minutes.
- 8 remove from pan while hot and cool on a rack.
- 9 repeat with remaining batter.
