Ginger Oatmeal Crisps

Total Time: 37 mins Preparation Time: 25 mins Cook Time: 12 mins

Ingredients

  • 2 eggs
  • 3/4 cup sugar or 3/4 cup splenda sugar substitute
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 tablespoon butter, melted
  • 2 teaspoons baking powder
  • 1 3/4 cups quick-cooking oats

Recipe

  • 1 heat oven to 350 degrees.
  • 2 in a large bowl beat eggs until frothy.
  • 3 add sugar, ginger, vanilla and salt; mix until sugar is dissolved, about 2 minutes longer.
  • 4 blend in butter and baking powder, then fold in oats.
  • 5 cover a large cookie sheet with ungreased foil.
  • 6 drop the batter onto sheet in rounded teaspoonfuls spaced 2" apart.
  • 7 bake in center of oven until the edges are golden brown, 10 to 12 minutes.
  • 8 remove from pan while hot and cool on a rack.
  • 9 repeat with remaining batter.
